    Blogmas | Being Veggie at Christmas

    I've been veggie since birth, so it's very natural to me, however I can appreciate Christmas is a time when some vegetarians will feel a little back-benched. IT'S ALL ABOUT MEAT.
    But don't get stuck with eating the side dishes, there are plenty of good, filling veggie meals.
    Example A:

    I made this dinner yesterday, and it is so incredibly easy and cheap. I call it a cupboard dinner, because it just empties out your kitchen of anything you're willing to use.
    Chuck a load of veg on a baking tray (I used cauliflower, chickpeas and peppers) and pour oil and whatever spices you like over them. Toss them about a bit to cover it all, and shove them in the oven, at 180, for around half an hour.....that's literally all the cooking necessary.
    We served our veg with guacamole and hummus; would've loved to make homemade hummus and guac but I was being a lazy bones! Also, we had our 'substance' provided by bagels, but you can use literally anything (pitta breads, quorn pieces, normal toast....whatever). 

    See! Veggies don't have to be stuck with mashed potatoes and salt for dinner.....that's not a dinner!
